Physical, Nutritional and Functional Properties of Walnuts Genotypes (Juglans regia L.) from Romania

Walnut (Juglans regia L.) is the oldest fruit grown in world and grows spontaneously almost throughout Romania. In this study, physical properties chemical composition of twenty types walnuts from three different locations Romania were studied. The analyzes that performed were: walnut dimensions shape (nut diameter, nut length, size), (walnut weight, kernel weight percentage kernel) external extraction, color shell roughness). proximate (content water, ash, lipids, proteins carbohydrates) was determined by standardized AOAC methods, while fatty compounds GSMS. Water content ranged 1.23% to 5.00%, mineral between 1.31% 2.49%, lipids 56.09% 66.56% protein 12.73% 20.413%. Based on these, carbohydrate nutritional value 20 samples calculated. all samples, saturated palmitic acid (C16:0) stearic (C18:0) as well unsaturated oleic (C18:1), linoleic (C18:2) linolenic (C18:3) acids determined. A statistical analysis also correlating results obtained walnuts.
